Chocolate Roll Cake Recipe

For the cake:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the cream filling:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

  1. Preheat oven and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper, leaving some overhang on the edges for easy removal.
  2. Prepare the cake batter: In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale in color. This should take about 5 minutes. Add in the vanilla extract and mix well.
  3. Add dry ingredients: Sift in the cocoa powder, flour, and salt into the egg mixture. Gently fold the dry ingredients into the egg mixture until just combined. Be careful not to overmix.
  4. Bake the cake: Pour the batter into the prepared jelly roll pan, spreading it out evenly with a spatula. Bake in the preheated oven for 10-12 minutes, or until the cake springs back when lightly touched.
  5. Prepare the cream filling: While the cake is baking, prepare the cream filling. In a medium mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  6. Roll the cake: Once the cake is baked, remove it from the oven and immediately loosen the edges with a knife. Lift the cake out of the pan using the parchment paper overhang and transfer it onto a clean kitchen towel dusted with powdered sugar. Carefully roll the cake, starting from the short end, using the towel to help you create a tight roll. Allow the cake to cool completely while rolled up.
  7. Fill the cake: Carefully unroll the cooled cake and spread the prepared cream filling evenly over the surface. Re-roll the cake without the towel, starting from the same end as before. Place the rolled cake seam-side down on a serving platter.
  8. Chill and serve: Wrap the rolled cake in plastic wrap and chill it in the refrigerator for at least 1 hour before serving. Slice and serve as desired.
