Mushroom and Cheese Stuffed Toasts



  • 8 large mushrooms, stems removed
  • 4 slices of your favorite bread (sourdough, whole wheat, or French bread work well)
  • 1 cup shredded cheese (cheddar, mozzarella, or Swiss)
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. Preheat your oven to 375°F (190°C).

  2. In a skillet over medium heat, melt the butter with olive oil. Add minced garlic and sauté for 1-2 minutes until fragrant.

  3. Add the mushroom caps to the skillet and cook for 3-4 minutes on each side until they are slightly softened. Remove from heat and set aside.

  4. Place the bread slices on a baking sheet lined with parchment paper.

  5. Divide the shredded cheese evenly among the bread slices, spreading it out to cover the surface.

  6. Place 2 mushroom caps on top of each bread slice, pressing them gently into the cheese.

  7. Sprinkle dried thyme over the mushrooms and season with salt and pepper to taste.

  8. Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly and the bread is toasted.

  9. Remove from the oven and let cool slightly before serving.

  10. Garnish with fresh parsley if desired, and serve warm.
