Wet Burritos

Ingredients:

  • 1 lb ground beef or shredded chicken
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 6 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 2 cups enchilada sauce
  • Optional toppings: chopped cilantro, diced tomatoes, sour cream, guacamole

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef or shredded chicken with chopped onion until browned.
  3. Add black beans, diced green chilies, ground cumin, chili powder, salt, and pepper. Cook for a few minutes until heated through.
  4. Warm flour tortillas and fill each with the meat mixture. Roll them up and place in a greased baking dish.
  5. Pour enchilada sauce over the burritos, then sprinkle shredded cheese on top.
  6. Bake for 20-25 minutes until cheese is melted and bubbly.
  7. Serve hot with optional toppings.
