KFC-style crispy chicken


While the exact recipe for KFC’s crispy chicken is proprietary and not publicly available, you can create a similar version at home with some basic ingredients and cooking techniques. Here’s a recipe for homemade KFC-style crispy chicken:


  • 4 bone-in, skin-on chicken pieces (such as thighs, drumsticks, or breasts)
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 2 eggs
  • 1/4 cup milk
  • Vegetable oil, for frying


  1. Prepare the chicken: Rinse the chicken pieces under cold water and pat them dry with paper towels. Season both sides of the chicken pieces with salt and black pepper.

  2. Prepare the breading: In a shallow dish, whisk together the flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, thyme, oregano, basil, and cayenne pepper (if using).

  3. Coat the chicken: In another shallow dish, beat the eggs with milk to create an egg wash. Dip each chicken piece into the egg wash, then dredge it in the seasoned flour mixture, pressing gently to adhere the coating. Shake off any excess flour.

  4. Double coat (optional): For an extra crispy coating, you can repeat the process of dipping the chicken in the egg wash and coating it with the seasoned flour mixture.

  5. Preheat the oil: In a large skillet or Dutch oven, heat vegetable oil to 350°F (175°C). There should be enough oil to submerge the chicken pieces halfway.

  6. Fry the chicken: Carefully place the coated chicken pieces into the hot oil, skin-side down. Fry for about 6-8 minutes on each side, or until the chicken is golden brown and crispy, and the internal temperature reaches 165°F (75°C) for white meat or 175°F (80°C) for dark meat.

  7. Drain and serve: Once the chicken is cooked through and crispy, remove it from the oil and place it on a wire rack set over a baking sheet or on a plate lined with paper towels to drain any excess oil.

  8. Serve: Serve the KFC-style crispy chicken hot with your favorite sides, such as mashed potatoes, coleslaw, biscuits, or macaroni and cheese.
