Ingredients:

  • 4 bone-in, skin-on chicken pieces (such as thighs, drumsticks, or breasts)
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

  2. Prepare the breading: In a shallow dish, whisk together the flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, thyme, oregano, basil, and cayenne pepper (if using).

  3. Coat the chicken: In another shallow dish, beat the eggs with milk to create an egg wash. Dip each chicken piece into the egg wash, then dredge it in the seasoned flour mixture, pressing gently to adhere the coating. Shake off any excess flour.

  4. Double coat (optional): For an extra crispy coating, you can repeat the process of dipping the chicken in the egg wash and coating it with the seasoned flour mixture.

  5. Preheat the oil: In a large skillet or Dutch oven, heat vegetable oil to 350°F (175°C). There should be enough oil to submerge the chicken pieces halfway.
