Easy Chicken & Cheese Casserole



  • 2 cups cooked chicken, shredded or diced
  • 1 cup cooked rice (white or brown)
  • 1 cup frozen mixed vegetables (such as peas, carrots, corn)
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • Salt and pepper, to taste
  • Optional: dried herbs or spices for extra flavor (such as garlic powder, onion powder, paprika)


  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, frozen mixed vegetables, shredded cheddar cheese, condensed cream of chicken soup, salt, pepper, and any optional herbs or spices. Stir until everything is well combined.
  3. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and slightly golden on top.
  5. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  6. Serve the low-ingredient chicken and cheese casserole hot, and enjoy its comforting flavors with minimal effort!
