Chicken, Zucchini, and Fresh Corn Burgers:

Ingredients:

  • 1 pound ground chicken
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup fresh corn kernels (from about 2 ears of corn)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Burger buns
  • Optional toppings: lettuce, tomato slices, avocado slices, mayonnaise, mustard, etc.

Instructions:

  1. In a large mixing bowl, combine the ground chicken, grated zucchini, fresh corn kernels, breadcrumbs, Parmesan cheese, minced garlic, dried oregano, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into equal portions and shape them into burger patties. You should get about 4-6 patties depending on the size you prefer.
  3. Heat olive oil in a skillet over medium heat. Once the oil is hot, add the burger patties to the skillet.
  4. Cook the patties for about 4-5 minutes on each side, or until they are cooked through and golden brown on the outside. Make sure to cook them thoroughly, as chicken should reach an internal temperature of 165°F (75°C).
  5. Once the burgers are cooked, remove them from the skillet and let them rest for a few minutes.
  6. Toast the burger buns if desired. Then assemble the burgers by placing the cooked patties on the bottom buns and adding your favorite toppings such as lettuce, tomato slices, avocado slices, mayonnaise, mustard, etc.
  7. Serve the Chicken, Zucchini, and Fresh Corn Burgers immediately and enjoy!
